Syllabus

To study the analysis of food materials including proximate composition (moisture, total solids, carbohydrates, proteins, lipids, vitamins, minerals, toxins, allergens), protein separation, lipid separation and characterization, analysis of materials of concern in foods, texture analysis in foods, rheological characterization of foods, thermal properties of foods.
